You can follow the same heart-healthy diet as the participants of the BOLD study by using the recipes from The Healthy Beef Cookbook, a collection of delicious, nutrient- rich recipes featuring America’s favorite protein—beef.
Lean beef is the perfect pairing–easily served with vegetables, grains and dairy–and improves taste and satisfaction and maximizes nutrients to keep your body healthy. Here is a one-day sample menu from the BOLD diet.
A 3 oz. serving of lean beef contributes less than 10 percent of calories to a 2,000-calorie diet and it supplies more than 10 percent of the Daily Value (DV) for 10 essential nutrients. On average, a 3 oz. serving of lean beef (about the size
of a deck of cards) contains about 150 calories and is an excellent source of six nutrients (protein, zinc, vitamin B12, vitamin B6, niacin and selenium) and a good source of four nutrients (phosphorous, choline, iron and riboflavin).

On Nov. 2, 1929, Harold and Gladys Nikalson fired up a little stove burning what was then known as “white gas” and starting turning out what became the most well-known and enduring hamburgers in Brookings, South Dakota history. The hamburgers were sold for five cents through the Dirty Thirties and WWII . The nickels and dimes coming in were dropped into the shop’s tin cupcake pan that served as a cash register.
Today, Nick's Hamburger Shop is still proudly serving the community. Over the years, there's been an effort to preserve much of the feel and ambience of the original restaurant. Nick's has become an institution in Brookings, a familiar stop where hamburgers are still served on a square of waxed paper to save on dish washing. The quaint little shop has become a common denominator with which everyone regardless of age, station in life or other interests can relate. It is not uncommon for strangers to meet at some secluded spot on earth, learn that they both attended SDSU or once lived in Brookings, and invariably there is mention of the great burgers served at the corner of Main Avenue and Fifth Street.
Recently, owner Dick Fergen announced the completion of the Nick's Restaurant remodel. Don't worry though, Nick's still has the same classic look and delicious burgers, they've just added more space!
We started Little Italy's on August 2nd 1999. Our first location was across the street and we could seat only 36 people, very very small and we were not sure how it was going to go over in this new town, where people did not know us, or about our product. Rick and Rick, Jr. did most of the remodel by themselves. We just knew we wanted to be in a small town like both Rick and myself grew up, the loving feeling that you get from other people in a smaller community. Rick's four out of five kids have always been a part of the store (Unfortunately one is out in California! :) We are so thankful to them for all of their hard work. Some of the pizza's that are on the menu have been created by us with some dead hours in the day. We want to try something new and different, so try, try, try and then WOW, how great is this!! (I think people will order it). On the menu it goes, to see if we have a great idea or need to go back to the drawing board again. We truly believe in putting out a good product at a fair price. (If we won't eat it, then the public won't either). We are so thankful for every day, what we are given by the good Lord, without him, this idea would never have worked. We are also very grateful for the town of Vermillion, for taking us in and making us feel like family!! And if you love our pizza, join our family, call us for franchise information.

In 1997, Fired Up Restaurant Concepts acquired the only five existing Johnny Carino's Italian Kitchen, infusing them with the energy and passion we know today. Starting with Chef Carino in the early years, and carrying forward today with Chef Chris Peitersen, Johnny Carino's has developed many signature dishes that respect the authentic Italian traditions, while creating unique flavor profiles that express Johnny Carino's passion and creativity, and commitment to quality food at a great value.
When does a restaurant become more than a place to get something to eat? When does eating out become a great experience? This is our purpose at Johnny Carino's, and what we strive for everyday.
Food is at the heart of this mission. From the Italian classics to our signature dishes, such as Skilletini and Spicy Shrimp and Chicken, all of our offerings are handcrafted from the finest, freshest ingredients available.
We revere the tradition of serving only the best, and when it means coming in early to hand-roll the meatballs, build a 16-layer lasagna one layer at a time, or craft our tiramisu from scratch, we think of it as passion, not work.
